Menu Feature: Tri-Cheese Plate

Alimentari Cucina e Bar aims to present Italian-inspired cuisine in the heart of downtown Chattanooga, but when it comes to the Tri-Cheese Plate, Chef Jeremy Auspitz kept the inspiration closer to home—45 minutes northwest to be exact.

"I chose cheeses from Sequatchie Cove Creamery because I’m always looking for an appropriate space to show a regional influence on the menu,” Chef Auspitz said. “This plate gave us an opportunity to show how prevalent Sequatchie Cove is within Chattanooga’s community, while also connecting our kitchen to the Tennessee farmland,” he continued.

According to their site, "Sequatchie Cove Creamery produces farmstead cheeses using time-honored European traditions with a distinctly Southern flair." Each cheese is made from the raw milk of free-roaming grass-fed cows, and comes with a high standard for safety, quality, and expression of the local “terroir”.

Served with olives, seasonal fruit, and crisp lavosh, the Tri-Cheese Plate is great with a glass of wine—or two—all evening long at Alimentari Cucina e Bar.
